banana pancakes
Ingredients
> pancake mix 1C - I use Kodiak cakes mix
> ripe banana
> vanilla extract
> water ~ 3/4C
> ginger spice mix (nutmeg, ginger, cinnamon, clove, allspice, black pepper)

The key to pancakes is not to over mix the batter! As well, mix with a whisk or fork - yes, it makes a difference.

Begin by mashing your banana in a large bowl. An immersion blender works great here, but a good old fashioned fork does the trick too ;). Add in the ginger spice mix and vanilla extract to the banana mash and mix together. Add in water and pancake mix and mix until smooth.
Heat a griddle over medium heat. Once pan has come to temp, add 2-4T of batter onto the pan per pancake. Cook until little bubbles begin to form, then flip and cook for about 2 more minutes.

Does the ginger spice mix sound weird? It's the secret ingredient that really makes this dish pop!
Modifications: I like to toast in a pan some walnuts and top my pancakes. Also especially delicious with peanut butter on top too!
