Italian Sausage Pasta

> rotini pasta

> 1-2 packages of Italian sausage *if using two, I like 1 spicy and 1 sweet

> 1/2 jar sun dried tomatoes - chopped

> 1C heavy cream

> 3/4C  chicken broth

> 1/2C marsala wine 

> 1/2C fresh sage, chopped

> 1/2C grated parmesan cheese

In salted boiling water, cook pasta according to package instructions (about 8 minutes). 

Meanwhile in a saute pan, begin to cook the sausage. Once sausage is cooked, add in the chopped sun dried tomatoes and cook for about 3 minutes.  Adding in about 3/4 of the chopped sage.  Cook for about 2 minutes.

Add in the Marsala wine and cook down for about 3 minutes.  Next, add in the chicken broth and cook down for about 3 minutes, lowering the heat to medium low. Pour in heavy cream and parmesan cheese. 

Once the sauce thickens to your liking, top with fresh parm cheese and the remaining sage. Enjoy!
